"Pumpkin Pasties" and Potters

Ok, it wasn't really a party... more of an after school celebration. We were excited to get our new Harry Potter and The Sorcerer's Stone- The Illustrated Edition. I surprised my girls with it. We had just drove to DC this past weekend, about a 5 hour drive from our house and listened to the audio version on our way home. We were all really into it. My 2nd grader got mad whenever I paused it, she didn't want to stop listening. I had a friend recommend we listen to it, she said they would go sit in the car and listen to it when they were getting near the end.

When we listened to the book, every time they said "pumpkin pasties" I craved pumpkin bread.
So we made some and here is the recipe we used-

Healthy Paleo Pumpkin Bread
1 cup Almond Butter (or any nut butter will work)
1 Banana (mine was green and worked great)
1/2 cup Pumpkin Purée
1/4 cup honey

2 eggs
3 tablespoons coconut flour
1 tablespoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Pinch of salt
3/4 cup chocolate chips
Mix all of the ingredients, starting with the wet then combine the dry. Bake at 350 for about 50 min. Or until top is golden and tooth pick comes out clean. (I also use this recipe for muffins, bake for about 17 minutes, until toothpick comes out clean).

 
 We also made our version of "Butter Beer" I didn't hear mention of it in this first book, but it is always associated with Harry Potter, and we needed a fun drink!

This is how we made it-
1/2 cup whipping cream
2 packets of Truvia or 2 teaspoons sugar
1/2 teaspoon vanilla
1 tablespoon of salted Carmel or butterscotch ice cream topping
Whip all of that together in a standing or hand mixer until it thickens. Scoop up a couple ice cream scoops full and top over Cream Soda. I sprinkled black sprinkles on the top of ours.


We started over reading it and looking at the gorgeous illustrations. This will be a great thing to get my daughter who is in 2nd grade excited to read!
